Gluten Free Cooking Class

Hands on gluten free classes will enable those with gluten intolerance to bring great flavours back into your lives. My selection of dishes are refreshing and a perfect alternative for your table and delightful for entertaining. At Cucina Italiana we understand the ups and downs of the gluten and how it is created. Therefore it makes it simple for us to guide you through the challenge ahead of you in cooking without this complex molecule.

We do not hold gluten free exclusive classes. What we do is welcome you to join our classes and cook the same menu, only using the correct gluten free flour and ingredients that will be perfect for your diet. In fact, we feel that it is important for you to see the difference between dough which contains gluten and one that is gluten free.

The best class for you to start is our popular "Menu Classico" where we make four recipes, which include making fresh pasta from scratch. The menu for this class will be as follows:

  • Antipasto Toscano of Borlotti Beans and Olives: a classical Tuscan Recipe, which delivers the outstanding rustic flavours of this region.
  • Tortelli di Zucca (Tortelli stuffed with pumpkin): this fresh pasta is the home flag of Ferrara in Emilia Romagna. It is done the right way, served and cooked perfectly for your full enjoyment.
  • Casunziei Ampezzani: a classical fresh pasta stuffed with beetroot which originated from Cortina D'Ampezzo
  • Semifreddo al Caffe: a delightful dessert that has been part of our famous repertoire of recipes.

You will be guided through this menu and you will have a complete gluten free meal served with a selection of wine.
