Controlling the Fire: The Ancestral Art of Cooking

Luciana Sampogna together with her husband Andrew Russell have developed a cooking program that will unfold the secrets of cooking in your wood fire oven.

As we travelled through Italy and discovered so many wonderful ways of cooking with this ancestral method, we thought it would be great to share the magic and enchantment which has opened our eyes with our students.

And as expected, many questions were raised as we were designing this program.

The most common problem we expected to face was that many people do not own a wood fire oven. Well, the answer to this is simple. If you love cooking like we do, you will fall in love with these ovens and certainly end up owning one very soon. So why not experience ours first? Our classes will concentrate on the art of making pizza dough from scratch and also help you cook a full menu with meat and vegetables from your own home. All of this can be replicated with your conventional oven until you are ready to play with fire and make the big move!

It is all about understanding that fire was the first and most authentic method of cooking. Learning to balance food with simple flavours is so important, and when you achieve this, you will trust that fire will take care of the rest. After all, there is nowhere to hide with this type of cooking.

Once you have mastered the perfect pizza base, you will see it bubbling and lifting away from the oven floor. You will see the cheese melting, and then the fresh herbs will be added. Finally your pizza is ready for you to taste with a cold beer or a glass of wine.
