Our working area is designed for kneading doughs such as pasta or bread, gnocchi or pasta frolla (short crust pastry). We want our students to feel their hands moving, to understand how dramatically the weather can change the texture of the dough – how a little bit of air here and there can change everything. We want to give more – more than a home to our students, more than a cooking school for the ones who cannot stop learning. We want to give an experience, we want our students to breath history, to inhale the art left by the Italian immigration in Sydney. Once you step down thorough the gardens you may think you are now truly in Italy without being asked for your passport. Around the entrance the pond with the lion figure – Italy as it is best. In the foyer the terrazzo and mosaic is clearly present reminding you the greatest artwork given by the Italian immigration. And once you entered the dining area you will be amazed with the detailed work in the ceiling and soon you understand the history of this house, handcrafted by the Melocco Brothers. With the most elegant chandeliers, your dining will be an unforgettable experience. Take a walk through our beautiful courtyard where you will also see the elegant marble table being the first cut of marble for Darling Harbour, Sydney – NSW. Around that table the beautiful lion seats, the bench made in stone where most of the family photos of the Melocco Brothers took place. Living Italy is not only in our work, in what we deliver, it is our promises that we will give to you. Authenticity and home food is the only way to define Italian Cooking.
